Ingredients
- 2 large sweet potatoes
- 2 large Irish potatoes
- 1-3 large eggs
- 6 bacon strips, cut into 1-2inch pieces
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1/2 medium zucchini, chopped
- 1 Tbsp of Bailan Roasted Vegetable Seasoning
- 1/2 Tsp of powder garlic
- 2 Tbsp of vegetable oil
- Salt and pepper to taste
How To
- Peel, wash, dice, and boil the potatoes for 5-7mins, untill almost ready
- Cook bacon and set aside (Tip: Boil bacon with water for 5mins and drain to reduce sodium)
- Drain water from potatoes and add oil, onions, zucchini, bell pepper, Bailan Roasted Vegetable Seasoning, salt and pepper, and saute till cooked
- Fry egg(s) with a dash of salt and pepper
- Add bacon and egg(s) to vegetables and serve hot
