Ingredients

1 pound boneless chicken cut into 1-2 inch cubes

1 Tablespoon of Bailan African Hot Chicken Spice

2 tablespoons of natural peanut butter (opt for no added salt or sugars)

4 medium fresh tomatoes

1 large onion

2 tablespoons vegetable oil

1 habanero pepper (optional)

1/2 red bell pepper, diced (optional)

Salt to taste
How To

Season the chicken with 3/4 Tbsp of Bailan Chicken Spice and salt to taste. Cook with little water on low heat, allowing the chicken to cook in its juices and absorb the seasoning.

While the chicken is cooking, blend the tomatoes, habanero pepper, and onion with a cup of water.

Heat the oil in a saucepan for a minute, then add the tomato-onion blend and 1/4 Tbsp Bailan Chicken Spice. Cook for 10-15 mins, till the water dries and the mixture begins to fry in the oil.

Add the chicken stock, peanut butter, and 2 cups of water. Mix well till the peanut butter dissolves.

Add the chicken, bell pepper, and salt to taste, cover and let simmer for 7-10minutes.

Serve warm with rice, plantains, or sweet potatoes.
